We have no reviews to go on, so this comparison looks only at what each edition contains and what it costs.
What every copy includes
Both editions give you the same game, built in Unreal Engine 5. There are two maps of about 100 km² each, Colorado and Texas, with 35 species whose behaviour is run by the SimFauna system: animals react to their surroundings and to you. You also get about 75 licensed weapons and items of gear, five licensed vehicles from Ford, Kawasaki and Polaris, and one dog breed to start with. More breeds are due in free updates.

The saving is at Eneba, whose Xbox key is €37.16 with the coupon Gocdkeys10 (€40.91 with fees); check its region before you buy. Media Markt has the Xbox disc at €59.99 (no fees).
Two things to check on Steam
There's a Steam demo, though your progress doesn't carry over to the full game.
Pre-ordering gave you the Classic American Hunter Pack, with a Winchester 1892 Short Rifle, an American Foxhound and a Verney-Carron hat. One deals site claims Steam is giving this pack away for a limited time. We couldn't confirm that and have no date, so look at the Steam page yourself.
Standard is enough for most hunters
Maps, species and vehicles are the heart of this game, and you get all of those for €19.19 (no fees), Steam key. Apex Predator's extra €24.80 buys extra gear and cabin decoration, which is only worth it if those specific brands matter to you.
