Both big consoles render at a native 2560x1440, apply 4xMSAA and draw the UI at 4K. There is no measured difference between them, so the console you already own decides this one.
Series S drops to a native 1920x1080 and keeps its UI at 1080p too. On last-gen hardware Xbox One S is the weakest at 1600x900, while PS4 holds native 1080p and Xbox One X posts the best quality mode of that group at 1440p.
Cutscenes show frame pacing issues on PS5, Series X and Series S, and also in the performance mode of PS4 Pro and Xbox One X. On Xbox One S they turn into outright frame rate drops. There is no technical breakdown of the PC version with these measurements.

Xbox is the Series X column unless Series S is stated. Resolution, modes, FPS, VRR and download size come from the videos; HDR, ray tracing and PC features from the technical sheet and the official Xbox catalogue.
PS5 and Xbox Series X tie: both render at a native 2560x1440 with 4xMSAA and a 4K UI. The measurements show no difference between them, so pick whichever console you own.
Resolution. It renders at a native 1920x1080 instead of 1440p and keeps the UI at 1080p. It shares the cutscene frame pacing issues with PS5 and Series X.
PS4 holds up fine at a native 1920x1080. Xbox One S is the weakest of the bunch at 1600x900, with frame rate drops during cutscenes. On PS4 Pro and Xbox One X the quality mode climbs to 2304x1296 and 2560x1440 respectively.
PS4 Pro and Xbox One X offer two, quality and performance. Performance drops both to a native 1080p, and that is where the cutscene pacing issues appear.
